HOW DO YOU BAKE A HEALTHIER, CLEANER BROWNIE
SWEET POTATO AND BROWNIES: A HEALTHY MATCH
     How do you bake a healthier, cleaner brownie? Add a sweet potato to the recipe. Sweet potatoes are root vegetables, packed with essential vitamins, minerals and antioxidants. You should choose to eat these and others in its class such as rutabagas, carrots, beets, radishes, turnips and parsnips to boost your immunity and fight inflammation.
     By adding one to two mashed sweet potatoes to the recipe, your brownie essentially becomes an immune boosting , cleaner food. I chose brownies because I like chocolate. But you can try adding sweet potatoes to cookie and cake recipes. We already know what they bring to sweet potato pies.
     Besides sweet potatoes, the recipe I chose also called for oat flour. Oat flour is naturally gluten-free, making it a suitable option for those who suffer with celiac disease or gluten intolerance.
     Here is the recipe, adapted from a July 2024 recipe by Lia Marino:
Prep time: 10 minutes Cook time: 30 minutes  Serves 9
Ingredients:

one cup cooked mashed sweet potatoes, about two sweet potatoes

1/2 cup melted coconut oil (you can substitute olive oil

two eggs

1/2 cup + 2 tablespoons maple syrup ( you can substitute honey)

One cup oat flour ( DO NOT SUBSTITUTE FLOURS HERE)

One teaspoon vanilla extract (optional)

1/2

1/3 cup unsweetened cocoa powder

1 teaspoon baking soda

1 teaspoon of baking powder

1/2 cup chocolate chips

Instructions:

pierce potatoes with a fork and microwave on high for 5-7 minutes on high (I baked mine) Once cooked, scoop out the center with a spoon. Discard the skins

FOR THE BROWNIES: 

preheat oven to 350F. Line an 8×8 baking dish with parchment paper and set aside

in a mixer or large bowl, combine mashed sweet potatoes, coconut oil, eggs and maple syrup until smooth

stir in oat flour, vanilla extract, cocoa powder, baking soda, baking powder. mix until combined.

fold in chocolate chips with a spatula

Pour the batter into the prepared pan and spread into an even layer

Bake until the top is set and a toothpick inserted into the center comes out almost clean, 25-30 minutes

Let the brownies cool for 10 minutes, then slice and serve
